    Not much. Ice cream has a low GI of 51, and a 66 g serving (½ cup) has a low glycemic load of 8. Ice cream's fat slows the absorption of its sugar, which keeps its average GI low, and a half-cup scoop has a low glycemic load — portion size and calories are the bigger issues.

    GI vs GL for ice cream

    The glycemic index (GI) compares how fast the carbohydrate in a food raises blood sugar against pure glucose (100), using a fixed amount of carbohydrate. The glycemic load (GL) adds the other half of the story — how much carbohydrate a normal serving actually contains: GI × available carbs ÷ 100. For ice cream: 51 × 15 g ÷ 100 ≈ 8.

    That figure is an average reported in the 2008 international GI tables (“Ice cream: 51 ± 3 (average of multiple studies)”). Reduced- and low-fat ice creams averaged 36 across 17 products in the 2021 tables, and two premium high-fat ice creams tested 37 and 38 in the 2008 tables.
